Herbed Sweet Potato Bake

Ingredients

  • 5-6 peeled and very thinly sliced sweet potatoes (about 3-4 lbs)

  • 2 tbsp onion powder

  • 1 tbsp minced or finely grated garlic

  • 2 tsp paprika

  • 1/3 cup loosely-packed parsley, roughly chopped

  • 1 tbsp thyme leaves

  • 2 tbsp lemon juice

  • 1/3 cup water

  • 1/4 cup chopped green onions and/or parsley, to serve

Preparation

  1. Preheat oven to 400F/200C.

  2. Add the sliced sweet potato, onion powder, garlic, paprika, herbs, and lemon juice to a large mixing bowl and toss until evenly coated.

  3. Arrange the sweet potato slices in a 9-inch square baking dish or equivalent. Pour in the water. Cover and bake for 50-60 minutes until very tender.

  4. Remove the cover and continue cooking for 5-10 minutes until slightly browned on the top. Remove from the oven and cool for 5-10 minutes before serving.

  5. Serve with fresh herbs on top.
