
Ingredients
5-6 peeled and very thinly sliced sweet potatoes (about 3-4 lbs)
2 tbsp onion powder
1 tbsp minced or finely grated garlic
2 tsp paprika
1/3 cup loosely-packed parsley, roughly chopped
1 tbsp thyme leaves
2 tbsp lemon juice
1/3 cup water
1/4 cup chopped green onions and/or parsley, to serve
Preparation
Preheat oven to 400F/200C.
Add the sliced sweet potato, onion powder, garlic, paprika, herbs, and lemon juice to a large mixing bowl and toss until evenly coated.
Arrange the sweet potato slices in a 9-inch square baking dish or equivalent. Pour in the water. Cover and bake for 50-60 minutes until very tender.
Remove the cover and continue cooking for 5-10 minutes until slightly browned on the top. Remove from the oven and cool for 5-10 minutes before serving.
Serve with fresh herbs on top.
